I seem to have been really hungry today and feel like I've eaten loads but I did go for a lovely, brisk walk in the little bit of sunshine we had this afternoon. Getting out when the sun's shining will do wonders for your mood. Although at this time of year the sun isn't strong enough to give us vitamin D, being outside and exercising has been shown to help reduce depression or prevent it.
Yesterday I made a pork casserole for some work I'm doing so I've put the recipe below for you to try.
400g diced pork
1 red onion, peeled and chopped
2 cloves garlic, peeled and crushed
½ swede

1 green pepper
Pinch of mixed herbs
Freshly ground black pepper
1 stock cube
400ml water
Serve with freshly steamed seasonal vegetables.

Fry the onion, garlic
and pork in a little olive oil. Add the swede, carrots and pepper then transfer
to a slow cooker and add the remaining ingredients or follow the steps below.

Preheat the oven to 160OC.

Stir in the stock cube,
water and herbs and transfer to an ovenproof
dish. Place in the preheated oven for 2 ½ hours until cooked.
